Southern Trumbull County has the best restaurants around. Hands down. Owning your own business is a major responsibility. Especially when it comes to food. Cleanliness, in a commercial grade kitchen, needs to the top priority for any chef, legally and morally.

What needs to be done in a kitchen daily, weekly, and monthly, and even yearly? SERVPRO of Trumbull County has created a to-do checklist with the help of Modern Restaurant Management’s suggestions on how to make a ‘happy kitchen.’

During and After Shifts

Lots of general cleaning can be done every day. There are several tasks you can do during and after shifts. Common tasks include washing tableware, glasses, and other utensils. But here are some you can add if you do not do these already. Did you know SERVPRO of Southern Trumbull County has a whole department for general cleaning? We can help with any of the below suggestions.

  • Wash cutting boards, countertops, and prep table surfaces

  • Wipe down and disinfect prep station surfaces after preparing food
  • Brush off griddles, grills and other cooktops after making meat, poultry or fish

End of the Day

After the guests are gone, kitchen staff and servers can clean the dining room, kitchen areas and equipment. MRR says these are the important things to do by the end of the day. SERVPRO of Southern Trumbull County has state of the art commercial grade washing equipment and can clean your table linens, uniforms and floor mats.

  • Sweep or vacuum the floors of your kitchen, pantries and walk-in fridges
  • Mop the floors (use strong degreaser to scrub major grease spills)
  • Clean floor mats
  • Clean the washing stations and sinks
  • Wipe spills and splatters off the walls
  • Wash and sanitize all countertops and prep area surfaces
  • Clean beverage dispensers and gun heads

  • Change foil linings on all ovens, grills and cooking equipment
  • Clean deep fryers
  • Run a load of kitchen rags and linens in the washing machine (separately from uniforms)

Weekly

Some things just cannot be done daily. And that is understandable. But do not forget to do these important cleaning regimens too, says Modern Restaurant Management.  SERVPRO of Southern Trumbull County teaches IICRC technical classes in the proper removal of odors.

  • Boil out deep fryers
  • Pour drain cleaners down floor and sink drains

Monthly

Monthly cleaning focuses mainly on the kitchen. Deep cleaning cannot be done daily. MRR suggests these at least once a month: SERVPRO can clean air ducts and help with your HVAC cleaning.

  • Scrub off spills and splatters from the walls and ceilings
  • Clean the condenser coil on refrigeration units every 1-3 months depending on dust or grease buildup
  • Clean the drain pans, tubes and air filters on refrigeration units
  • Wash the interior of reach-in or walk-in refrigeration units
  • Clean the exhaust hoods at least every 4-6 weeks
  • Empty grease traps
  • Calibrate thermostats and ovens (if necessary)
  • Switch out pest and inspect traps (if applicable)

Yearly

Some things do not need done as often as others. But the MRR suggests doing the following annually.
